Think I know what I'm going to do with the big courgette / marrow I got free from the potting shed the other day.

Marrow borani is a vibrant, Persian-inspired dish made of slow-cooked marrow and deeply savory tomatoes layered over creamy, chilled yoghurt 1. You can easily streamline the initial step of roasting the marrow by using the Air Crisp or Roast function on your Ninja 2 air fryer or multi-cooker to get a perfectly caramelized texture.

Ingredients

Cube the marrow and toss it with a tablespoon of olive oil and a pinch of salt. Place in your Ninja air fryer basket and cook at 180°C for 15–25 minutes until the marrow is soft and nicely charred. Use your Ninja on the Sauté setting and fry the onions until soft and golden. Add the garlic and cook for another minute. Add the chopped tomatoes, oregano, and the roasted marrow. Cook on medium heat for 15-20 minutes, allowing the liquid to evaporate until it forms a thick, jammy consistency. Season with salt and pepper.

Then we'll eat some of it, and I'll take the rest back to the pub. They get all the cheese and bread out on a Sunday so that might be nice to contribute this jammy dip type thing.
