Blog2017 ≫ Fast day recipe - low calorie vegetable balti

The vegetable miso soup we've been having on diet days has been really nice, but the curry we had the other day was a little bit limp, so trying a different one today. Clare has sent me the recipe:

Vegetable Balti

Serves 4. Total calories per person = 131. If you serve this chunky veggie curry without rice, it's way below the 200 calorie mark - don't worry, the butternut squash and parsnips will be more than enough to keep you full. (A serving of brown rice is just 83 cals if you do wish to have some on the side).

Ingredients

1 tbsp sunflower oil 1 onion, peeled and chopped 3 tbsp balti curry paste 2 parsnips, peeled and cubed 500g (1lb) butternut squash, peeled and cubed 400g can chopped tomatoes 500ml (16fl oz) vegetable stock 8 small cauliflower florets 60g (2oz) French beans

Method

Heat the oil in a wok or balti pan, add the onion and cook for a few mins. Add the balti curry paste and cook for a min. Add the parsnip, squash, tomatoes and stock. Bring to the boil, then simmer for 10 mins. Add the cauliflower and cook for 5 mins, then add the French beans and cook for 5 more mins, until all the vegetables are tender. Serve with rice, if you like.

We're having cauliflower rice instead of normal rice, and will definitely be adding chili to that, otherwise that is not going to be spicy. Think that was probably the problem with the last curry, just wasn't tasty enough. Adding extra flavour to things like that does not add extra calories. We got the curry paste as it's usually a more efficient way of getting in all the different flavours that you need without having to buy lots of different things but it looks like this one doesn't actually have a lot in it. The only unusual ingredient (that we don't have in the cupboard anyway) is fennel.

Normally we'd have penne arrabiata on Monday, every Monday without fail actually. Bit of a mixed up week this week though, bank holiday so I'm off, though Clare is working. Then it's half term too, and we have a couple of days off this week too. Normall our fast days would be Tuesday and Thursday (though this is only our third week of this) but we have a special meal planned for Thursday so will be doing Monday and Wednesday. Two days in a row of this would be too hard...
