Here is result of my proper dinner:

Aubergine Milanese with asparagus and lemon spaghetti

I should have cut the leeks finer, and kept an eye on the timings, the asparagus was a bit overdone. It doesn't look pretty, because I have quite a lot piled up on the plate but it was very tasty. Especially the aubergine. It's a shame no-one else would eat this I think. They don't really like aubergine, the fools, and are suspicious of lemon in the pasta. I did have four pans on the go to make this, quite a lot of washing up for just one dinner. Plus the Ninja earlier drying out the bread. That worked well, and mixing the breadcrumbs with herbs and a crushed seed vitamin mix I bought was good. That migh be a gimmick and not add anything but who knows?

The original recipe said to add "nutritional yeast" at this stage, no idea what that is and couldn't find it. It's not Marmite. It added vitamins and not flavour though I think.

I do have leftovers for today though. The pasta and the chickpea mash just needs reheating, but the aubergine wants frying afresh.

Clare has done her second night shift of this block, I heard her come in, but then went back to sleep for a bit. I assume we have slept through the clocks going back. All the devices adjust themselves these days.
